A Portuguese inspired restaurant that focuses on open fire cooking that is arguably, one of the first to start in the Philippines.

Run Sardine Run explores the soulful flavors from the Lusofonia regions including Mozambique, Brazil, Angola, Macau, Malacca and Goa which are Portuguese speaking colonies.

You can expect to indulge in a cultural exchange through food, a culinary experience that aims to take you back to the wonderful coastal shores of Portugal with notable influences from the East Indies, Africa and the Americas, where dishes reflect the wide variety of spices used through Portugal’s spice trade.

Spearheaded by none other than Culinary Director Fausto Airoldi, who is undoubtedly one of the strongest names in Portuguese cuisine of all time. He is a member of many notable culinary associations including the Portuguese Chef Association where he was the President for over 21 years, and is the author of “Cozinha com Identidade” that talks about food with identity. His work is a journey through the soul of food.
